Ingredients:
- 2 cups cooked white rice, preferably day-old or chilled
- 1 tablespoon vegetable oil
- 1/2 cup diced onion
- 1/2 cup diced carrots
- 1/2 cup frozen peas
- 2 garlic cloves, minced
- 2 tablespoons soy sauce
- 2 eggs, beaten
- Salt and pepper to taste
Optional: chopped scallions, sesame oil
Instructions:
Heat a wok or large skillet over high heat. Once it’s hot, add the vegetable oil and swirl it around to coat the bottom of the pan.
Add the diced onion and carrots to the pan and stir-fry for about 2-3 minutes, until they start to soften.
Add the frozen peas and minced garlic to the pan and stir-fry for another 1-2 minutes.
Move the vegetables to the side of the pan and add the beaten eggs to the other side. Scramble the eggs until they’re fully cooked, then mix them together with the vegetables.
Add the cooked rice to the pan and stir everything together until the rice is heated through and fully coated with the vegetables and eggs.
Add the soy sauce and stir everything together until it’s fully incorporated.
Season with salt and pepper to taste.
Optional: Garnish with chopped scallions and drizzle a small amount of sesame oil over the top for extra flavor.
