Roast Chicken Ingredients:

  • 1 whole chicken (3-4 pounds)
  • 1 lemon, cut into wedges
  • 1 head of garlic, cut in half crosswise
  • 2 sprigs of fresh rosemary
  • 2 tablespoons unsalted butter, melted
  • 2 teaspoons kosher salt
  • 1/2 teaspoon black pepper

Instructions:

Remove the giblets and neck from the chicken cavity and pat the chicken dry with paper towels.
